Pumpkin
Cookies
No
eggs needed in these soft moist cookies
preheat oven to 350 degrees
Preparation time 20 minutes
Sift
together dry ingredients in a medium bowl.
2 cups flour
1 teaspoon Soda, 1 teaspoon baking powder
1/2 teaspoon Salt, 1/2 teaspoon Cinnamon, 1/2 teaspoon
Nutmeg
1/4 teaspoon Ginger
In
a Mixing bowl beat together.
1 cup brown SugarLike®
2 cups pumpkin (one 16 ounce can or cooked and mashed
pumpkin)
1/2 cup Oil
1 teaspoon Vanilla
Add
flour mixture to wet mixture, stir until well blended.
Stir in
1 cup chopped nuts
1 cup raisins.
Drop
by level tablespoons 2 inches apart onto baking sheet.
Bake at 350 degrees for 15 minutes or until golden
brown. Cool 1 minute on pan. Remove from pans; cool
on wire rack. Yields 3 dozen cookies. Per serving
(1 cookie): 94 calories; 4g fat(39.6% calories from
fat); 1g protein; 13g carbohydrate; 1g dietary fiber;
0mg Cholesterol; 67mg Sodium. Exchanges: 1/2 Grain
(Starch); 0 lean meat; 0 fruit, 1/2 Other Carbohydrate.
