3 egg whites, at room temperature |

12 teaspoons of sugar substitute |

1/2 teaspoon cream of tartar |

1 teaspoon vanilla |
Preheat
oven to 200 degrees. Put egg white and cream of tartar
in a bowl. Beat with an electric mixer. Add sugar
a little at a time, whipping well in between. Add
vanilla and continue whipping until whites are very
stiff. This may take several minutes. Place heaping
spoonfuls of the mixture on a cookie sheet. Bake in
a 200 degree oven for 75 minutes. Turn oven off and
let cookies sit in oven for 2 more hours. Remove from
oven and store cookies in an airtight container.

Free Fudge

16 ounces cream cheese, softened |

1/2 cup sugar substitute |
| *
2 unsweetened chocolate squares (1 ounce each)
melted and cooled |
*
1 tsp vanilla extract |
| *
1/2 cup chopped pecans |
In
a small mixing bowl, beat the cream cheese, chocolate,
sweetener and vanilla until smooth. Stir in pecans.
Pour into 8-inch square baking pan lined with foil.
Cover and refridgerate overnight. Cut into 16 squares.
Serve chilled.
