Garbage
Chicken

5 lb Whole Chicken |

tsp thyme |

Carrot |

Cup Soy Sauce |
½
Stalk of Celery |

Cup Chicken Broth |
¼
Bell Pepper |

Tbsp. Butter |
¼
Onion |
Salt and Pepper (to taste) |

tsp Rosemary |

Wash
and clean the chicken. Sprinkle salt, pepper, rosemary
and thyme in side the chicken. Put 1 tablespoon butter
inside the chicken. Chop vegetables into large pieces
and place inside the chicken. Combine Broth and Soy
Sauce. Place chicken in pan with sauce. Bake at 350
degrees for 45 minutes.
As
a gastric bypass patient, I need the chicken to be
very tender. I double the broth and soy sauce and
cook at 325 degrees, wrapped in a foil tent for several
hours or use a slow cooker. I add cooked rice around
the edges for the last 15-30 minutes. I recommend
Basmaté rice or Uncle Ben’s Wild Rice,
but others work as well.
