August 2005 Recipe
Antioxidant Stew

2T. Olive Oil
1 Large Onion, chopped
1 to 3 Garlic Cloves, minced
2C. Peeled and cubed Sweet Potatoes
3C. Chicken Broth
1 Bay Leaf
2t. Paprika
Salt and Pepper to taste
1 Large, Ripe Tomato, chopped
10oz. Fresh or Frozen Green Beans cut in 2 inch pieces
1 Can (15 or 16 oz.) Garbanzo Beans, rinsed
5 oz. Fresh or Frozen Spinach, chopped

If using frozen green beans and/or spinach, set out to thaw.
1. Heat oil in a large saucepan over medium heat. Add onion, garlic, and sweet potatoes. Cook for 5 minutes, stirring occasionally.
2. Add broth, bay leaf, basil, thyme, and paprika. Stir; add salt and pepper to taste. Cover and reduce heat to simmer. Cook until vegetables are tender, about 10 to 15 minutes.
3. Add spinach; cook for 1 to 2 minutes. Taste and adjust seasonings.
