December 2005 Recipe
CHRISTMAS JELLO
Layer in a LARGE clear bowl

First Layer
6 oz. pkg. - lime jello (sugar free)
2 cup - boiling water, dissolve well
1 3/4 cup - cold water, stir and set

Second Layer
1 small pkg. - Knox unflavored gelatin
1/2 cup - boiling water, dissolve well
1 cup - sugar substitute
1 cup - non dairy creamer (such as Coffee Mate® or Creamora®)
1 tsp - vanilla
8 oz pkg. - cream cheese, beat all this til smooth
add 1/2 cup finely chopped pecans (or your favorite nut)
pour* over 1st layer and set.

Third Layer
6 oz. pkg. - raspberry jello (sugar free)
2 cup - boiling water, dissolve well
20 oz. frozen raspberries, thawed (juice included)
mix slightly and pour* over the other layers and set.

(I pour layers 2 and 3 over a Spatula to prevent forming "holes")
