Pumpkin
Cookies
No eggs needed in these moist soft
Cookies.
Preheat oven to 350 degrees. Preparation time 20 minutes.
Sift
together dry ingredients in a medium bowl
2 cups flour
1 teaspoon Soda, 1 teaspoon Baking Powder
1/2 teaspoon Salt, 1/2 teaspoon Cinnamon, 1/2 teaspoon
Nutmeg
1/4 teaspoon Ginger
In
Mixing bowl beat together
1 cup brown SugarLite®
2 cups Pumpkin (one 16 ounce can or cooked and mashed
pumpkin)
1/2 cup oil
1 teaspoon Vanilla
Add
flour mixture to wet mixture, stir until well blended.
Stir in
1/2 cup chopped nuts
1 cup Raisins.
