August 2006 Recipe
Black Bean Salsa
From the Kitchen of: Morgan

1 can whole kernel corn
1 can black beans
1 red onion
1 red bell pepper
2 jalapenos
2 small avocados
chopped cilantro

Dressing:
Juice of two limes
1 tsp. cumin
1 tsp. oregano
2 cloves garlic (chopped)
1 tbsp. olive oil
1 tbsp. red wine vinegar

Chop all ingredients and place in bowl. Mix together dressing and stir into salsa. Serve with corn chips or low-carb option of your choice.
