Zucchini
& Sweet Peppers w/Feta

cup chopped onion
1 Tbsp Olive Oil
3 medium zucchini (1/4" slices)
2 Tbsp water
1/2 tsp ground cumin |
1/2
cup bottled roasted red sweet peppers, drained
and sliced
Salt
Black Pepper
1 Tbsp Feta cheese |
In large skillet cook and stir onion in hot oil over
medium heat about 5 mins. or until tender. Add zucchini,
water, and cumin to skillet; reduce heat. Simmer,
covered for 3-5 mins. or until zucchini is crisp-tender.
Stir red peppers into zucchini mixture; heat through.
Season to taste with salt and pepper. Sprinkle with
cheese.
